What is honey made of?

Honey is mostly sugar and water — but the "mostly" is doing a lot of work. The small fraction that isn't sugar is what makes honey antibacterial, gives it flavor and color, and lets it sit in a jar for years without spoiling. Here's what's actually in there.

The breakdown

Every batch is a little different, but a typical jar of honey looks roughly like this:

  • ~80% sugars — mostly fructose and glucose, with small amounts of others.
  • ~17–18% water — and this number matters more than any other (more below).
  • ~2–3% everything else — enzymes, pollen, antioxidants, trace minerals, amino acids, aromatic compounds, and natural acids.

That last few percent is small by weight but it's the interesting part. It's the difference between honey and plain sugar water.

The sugars

Honey's two main sugars are fructose and glucose. The ratio between them, set by which flowers the nectar came from, decides a lot about the honey:

  • More fructose → the honey stays liquid longer and tastes a touch sweeter (fructose is the sweeter of the two).
  • More glucose → the honey crystallizes faster, because glucose is what comes out of solution first. This is why some honeys granulate in weeks and others take a year — see why raw honey crystallizes.

Because it's a near-even fructose/glucose split rather than pure sucrose (table sugar), your body absorbs honey a little differently than white sugar — but make no mistake, it's still sugar and still counts as sugar.

The water — why honey never spoils

Ripe honey holds only about 17–18% water, and that low number is the whole trick. There's so much sugar dissolved in so little water that the mixture pulls moisture out of any bacteria or mold that lands in it — nothing can grow. Bees actually earn this: they collect watery nectar (which can be 70%+ water) and fan it with their wings inside the hive until it thickens down to honey, then cap the cell with wax. That's why properly ripened, sealed honey is shelf-stable essentially forever. Jars found in ancient tombs have still been edible.

The flip side: if honey takes on water — a wet spoon, a loose lid in a humid room — it can start to ferment. That's why storage matters (how to store raw honey).

The enzymes

Bees add enzymes to nectar as they make honey. Two worth knowing:

  • Invertase splits complex nectar sugar into the fructose and glucose that make up honey.
  • Glucose oxidase slowly produces tiny amounts of hydrogen peroxide, part of honey's natural antibacterial defense.

These enzymes are heat-sensitive. Pasteurized supermarket honey has largely cooked them off; raw honey still has them. It's a big part of why we sell honey raw — raw vs. pasteurized honey.

Pollen, antioxidants, and the trace stuff

Raw honey carries small amounts of pollen from the flowers the bees worked — the "fingerprint" that ties a honey to a place. Alongside it are antioxidants (flavonoids and phenolic acids from the flowers), trace minerals, amino acids, and the volatile aromatic compounds that give each honey its smell and flavor. Darker honeys generally carry more antioxidants than light ones. None of these are present in large amounts — honey is not a multivitamin — but they're real, and fine-filtering strips most of them out.

Nutrition, straight

A tablespoon of honey is roughly 60 calories and about 17 grams of sugar. It has trace minerals and antioxidants that refined sugar doesn't, and it's sweeter by volume so you often use a little less. But nutritionally it's still a sugar — a better-quality one, not a health food. If you're managing blood sugar or diabetes, treat it like the sugar it is and talk to your doctor. Why this is the argument for local honey

Sugar and water you can get anywhere. The enzymes, pollen, antioxidants, and aromatics — the reasons honey is more than a sweetener — are exactly what survive in raw honey and get processed out of the commodity jar. Buy it raw and local and you get all of it. That's the case, in one paragraph.
